Kentucky distilleries in 1893

While working on the scrapbook inventory here at work, I came across an article about Kentucky distilleries in 1893 and how they lead the nation in paying taxes to the Federal Government. Here is an interesting paragraph from the article:

"For the fiscal year ending June 30, 1893, Kentucky contributed to the United States inthe way of internal revenue taxes $26,618,820.30. On June 30, 1893, 844 distilleries were registered in Kentucky and of that number 780 were operated. In the production of distilled spirits they used, 1,157883 bushels of malt, 18,848 bushels of wheat, 966 bushels of barley, 1,599,158 bushels of rye, 7,563,207 bushels of corn, 3,777 bushels of oats, 32 bushels of mill feed, 107,010 gallons of molasses, making a grand total of 10,343,871 bushels of grain."

Not everyone was distilling bourbon and yet some of these other grains could have been put into the "bourbon" mash in 1893 without any thought about it being wrong, since there was no legal definition of bourbon.

Jeff,
I would say that this figure is all malt, but probably 99% of it is barley malt.
