Tennessee Maple Charcoal Filtration Viewed in 1908

This will interest some here, a chemist reviewed the process of maple charcoal leaching at Cascade Distillery (forerunner to George Dickel) in 1908, not long before state prohibition put whiskey out of business in Tennessee.

Good article Gary, thanks. I've long maintained (without doing any proper research) that the Lincoln County Process was developed to jump start maturity and yes, it produces a lighter bodied whisky.

Thanks Squire. What's interesting in particular to me is that the author seemed certain the technique was a Tennessee one. Of course some Kentucky distillers may have used it in a similar way - as a way-station to make fully-matured whiskey (not neutral spirits) - but I haven't seen any proof of it yet (so to speak).

What may have happened is, methodical warehouse aging originated in Kentucky, finally penetrated to Tennessee, but the Tennesseans were loathe to give up the charcoal leaching method they had used when selling the whiskey white or very young.
