Not overly complex but there is a hint of oak and fine leather in the background | Taste: | Starts very sweet with caramel and honey, a bitof tobacco and maybe apricot. | Finish: | Gets spicy as it lingers. Start sweet but then some oak and spice kick in making it a bit more interesting. | Overall: | Interesting concept. I am not sure how a solera process can be used to make Bourbon since there is a new barrel requirement but they have approval to do so. They are using Colorado craft whiskey, Kentucky, Indiana and Tennessee aged products to combine to make this whiskey. They are very open as to this fact of sourcing their whiskey from other states. |
